Bourbon Sweet Potatoe

sweet potatoes (4 1/2 lbs.) baked in jackets 40-60 minutes
or until soft; or 3 18-oz. cans sweet potatoes, drained
3/4 cup plus 2 tbsp. butter or margarine
1/3 to 1/2 cup bourbon
1/2 tsp. salt
1/2 cup coarsely chopped walnuts or pecans.
If
using fresh sweet potatoes, cut in half, scoop out pulp
and place in large bowl. If using canned, drain well and
do the same. With electric mixer beat at medium speed
until smooth. in saucepan heat 3/4 cup butter, the bourbon
and salt over low heat; add to potatoes and beat until
blended. Turn into 6 cup baking dish. Dot with remaining
butter and sprinkle with nuts. Bake at 350 degrees about
20 minutes. Serves 8.
For
Microwave Ovens:
Prepare as above. Cook in 6 cup glass baking dish 9 minutes
turning dish twice.
