Oregon Filbert Carrot Cake

cup butter
1 cup sugar
2 eggs, beaten
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. Lemon Rind, grated
1/2 tsp. cinnamon mixed with dash of nutmeg and allspice
1 cup grated zucchini
1 cup grated carrots
1 cup chopped Oregon Filberts
Preheat
oven to 375 degrees. Cream butter and sugar together,
add eggs, lemon rind, spices and grated zucchini and carrots.
Beat well. Fold in 1/2 cup of the filberts. Sift flour,
baking powder and salt together. Add to cream mixture,
mix well. Pour batter into a greased 8-inch square baking
pan. Sprinkle rest of filberts on top. Bake 1 hour or
until pick in center comes out dry. Delicious served with
whipped cream season with lemon extract, or a scoop of
maplenut Ice-cream.
