Ginger Bread With Topping

eggs
1/4 cup brown sugar
1/4 cup molasses
3/4 cup butter
1/2 tsp soda
2 1/4 cups flour
1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp nutmeg
1 tsp. baking powder
1 cup boiling water
Add
beaten eggs to sugar, molasses, melted butter. Add sifted
dry ingredients, then water. Blend well, bake in square
pan about 40 minutes in 350 degree oven. Serve with whipped
cream, sweetened with sugar and vanilla - or the topping
below.
Gingerbread Topping: 1/4 cup butter 1/2 cup light brown
sugar 1/4 cup sweetened condensed milk 1 cup shredded
coconut 1 tsp. vanilla Pinch of salt Spread this well-blended
mixture on the baked gingerbread, place under the broiler
to heat for 3 to 4 minutes. Watch carefully not to burn.
